Life is Sweet for Head Chef Paul


The Boot, Head Chef, Paul Townsend, has had an exciting couple of years since joining The Boot, as Sous Chef – culminating in his wedding last month to Colette.

Paul joined the Boot from The Peacock at Rowsley, where he has carved out a very successful career over the previous three years before joining the award winning team at The Boot.

“It was apparent from the moment he arrived that he was going to be a great asset for the business”

said Senior Executive Head Chef Rob Taylor.

“His skill and dedication was immense and I knew it wouldn’t be long until he would progress his career further”.

Rob’s prediction was certainly right! Not only has The Boot Pastry section never been better but also, after working closely with Rob on Menus and building the right team, Rob had no hesitation in promoting Paul to Head Chef.

His marriage to Colette was a fabulous event and luckily, the new Mrs Townsend knows what the industry is like and the hours Paul has to work. With Colette behind him, Paul is looking forward to creating more memorable dishes and helping The Boot to win lots more awards.
